BELLAMY BLUE CHEESE CREAM

Servings: 7 cups

INGREDIENTS

  • 1 Vidalia Onion, small dice
  • 1 ozOlive oil
  • 4 clovesGarlic
  • 1/4 cup Mitchners Bourbon
  • 4 cups Heavy cream
  • 2 cups Parmesan, grated
  • 1/2 cup Sequatchie Bellamy Blue Cheese

INSTRUCTIONS

  1. Caramelize onions in oil on medium heat
  2. Add garlic and cook for a few minutes until the bottom of the pan starts to brown.
  3. Reduce heat and add bourbon to deglaze the pan
  4. Add heavy cream and bring to a simmer
  5. Add Parmesan and Bellamy blue cheese
  6. Whisk to fully incorporate cheeses
  7. Blend in blender at high speed
  8. Serve immediately
