Our Mild Cheddar Cheese is handcrafted in our LaValle, Wisconsin plant in small vats by cheesemakers with more than 100 years experience. This cheddar cheese is 3 months old and will have a mild creamy texture. Great melting ability!

2 YEAR YELLOW CHEDDAR

Our 2 Year Cheddar starts out as fresh curd that is hand packed in 40 lb. blocks and then manually pressed. We then carefully age the blocks for just the right amount of time. You will appreciate the attention we have given to our aged cheddars. The perfect cheese to melt over your burger.

Pepper Jack

A Monterey Jack cheese with green and red jalapeno peppers throughout. It has a spicy and robust flavor that balances well with the smooth jack cheese! Great for snacking, melts and slices well.

GLACIER WILDFIRE BLUE

Our newest blue cheese produced in our Glacier Point facility, it is a delectable symphony of mild blue notes and Peperoncino peppers that bodes a smoothness that can only be described after trying it for yourself. As featured on many local menus, it adds a silky fire atop burgers, pizza and steaks.

The CARR VALLEY Story

Certified Master Cheesemaker Sid Cook has won more top national
and international awards than any other cheesemaker in North
America. As a fourth-generation cheesemaker, he received his
cheesemaking license when he was 16, and now owns and operates
four cheese plants and eight retail cheese stores in Wisconsin. As a
company, Carr Valley Cheese began in 1902, and today is best known
for producing high-quality, artisanal aged Cheddars. Using cow, goat,
and sheep milks, Sid enjoys creating new cheeses, and Carr Valley
now produces more than 50 original varieties. He crafts cheese the
old-fashioned way, by hand, with a goal of producing high-quality
cheese with outstanding flavor. Sid's original Snow White Goat
Cheddar won the 1st place "Best of Show" Award at the 2008 American
Cheese Society Competition.
